People often say
Japanese food is healthy, beautiful, and balanced.

But to me,
it feels more than that.

Why does Japanese food feel
so different from other cuisines?

An ossan knows this:

Japanese food is not about pleasure first.
It is about restraint.

Not “less flavor,”
but knowing when to stop.

A bowl of rice.
Grilled fish.
Soup.
Pickles.

Nothing tries to impress you.
Nothing demands attention.

Japanese food assumes
you will eat again tomorrow.

That changes everything.

There is no need to exaggerate.
No need to conquer hunger.
No need to prove abundance.

An ossan learns this with age:

Food that tries too hard
gets tiring.

Food that respects limits
stays with you.

Japanese food does not shout,
“You deserve this.”

It quietly says,
“This is enough.”

And somehow,
that makes you feel calm.

Not full.
Not excited.

Just… settled.
